So, What Are You Having For Dinner?

I’m in a complete cooking rut.  Nothing lately has sounded particularly interesting to me, either to cook or to eat.  Yet, I do still have a family to feed.

In honor of the last day of the “food” theme from this month’s NaBloPoMo (which I thought about participating in–really I did), I end the month with a food topic.

What are you having for dinner tonight?  What should we have in Suburbia?  Discuss amongst yourselves!

We are currently scheduled to go to an outdoor concert tonight. For this, I decided to go to the local grocery store and get pinwheel sandwiches — if we don’t go to the concert – we’ll still eat the pinwheels.

As I hear thunder now – I’m logging off (and hoping the rain clears before evening).

  2. For once I know and I’m making it easy here, chicken frajitas. I have seasoned precooked chicken strips, curtesy of Market Day, frozen pepper/onion stips. Zap all that separatelly in the microwave and put on tortillas with salsa and sour cream if we have some. I like easy and this is about as easy as it gets.

  3. Go over to Paige’s food blog at She usually has some good recipes there.

How about taking some of summer’s bounty of vegetables and whipping up a curry? You can add chicken or beef or whatever other protein the family likes. You’ll find an easy recipe on the back of a can of (lite) coconut milk. Basically, heat 3T of veg. oil in a saute pan. Add 3T of curry powder until fragrant. Saute in one whole, sweet onion chopped rough + one green pepper + one red pepper + any other veggies you have around. Throw in the protein, seasoned and cut in cubes; cook almost through. Season all with soy sauce, fish sauce, or oyster sauce. Add coconut milk and a couple of handfuls of frozen peas. Serve over jasmine rice.

Well I am having a veggie burger, veggie kabobs, and parogies. Fly Guy and the girls are having the same thing except for kilbasa rather then veggie burger. It is a meal we have when Fly Guy is missing Pittsburgh since that is what he ate all the time growing up.

We’re having leftover lasagna — the lasagna being bought last night at a local cafe/takeout place when our evening started to get a little more complicated than expected. So nothing to inspire you — but you can feel good that whatever you’re cooking, it’s probably higher on the domesticity scale than leftover takeout (though it is very good take out…).

We’re trying this tonight. SOUNDS SIMPLE but flavorful! I”ll let ya know.

  7. We are having a simple meal tonight. It’s 95 degrees, and I don’t want to heat up the oven. Marinated chicken cooked on the grill and a fresh spinach salad should do the trick! I’m sure the others in my home will also be having ice cream for dessert 🙂

  8. The kids are at their dad’s and my husband isn’t hungry, so I had a cheese sandwich and a handful of potato chips. I have not been in the cooking groove lately… guess I need to get back to it now that school is starting!

  9. We had pork chops, green beans and zucchini parmesan muffins tonight. Muffin recipe is on Doc Thelma’s Kitchen.

Last night I made Cheeseburger pie and tater tots for 70!

No good ideas here. We had left over pork chops and pasta. Tomorrow is KFC for DD4’s b-day and the night before we leave for vacation. I get in cooking ruts too.

  11. Well, I know you solved your problem – and it looked lovely! We had chicken breats and pasta with some peas and carrots. I’m out of dream dinners until I go back there next week. I’ve got chili and burgers planned for the weekend. Bought some chili mix when I was in Austin – gotta get the Texas mix!
